I baked Apple Cinnamon Coffee Cake today and for my Facebook friends who once asked me for the recipe, here it is. Sorry for the late posting. There is no photo of the cooked cake but I assure you that it’s good
Apple Cinnamon Coffee Cake (cooks on 8×8 inch pan)
Cake:
- 1/2 cup butter or margarine
- 1 cup white sugar
- 2 large eggs
- 1 and 1/2 cups of flour
- 1 tsp baking soda
- 1 cup sour cream
- vanilla to taste
Filling and topping:
- 1 cup brown sugar
- 3 medium apples, chopped
- 2 tspn cinnamon
How to:
- Grease and flour pan well and preheat oven to 325 degrees F.
- Cream the margarine and sugar well until light and fluffy
- Add the eggs at a time
- Combine flour and baking soda and then stir in until just combined.
- Gently stir in the sour cream and vanilla
Filling:
- Combine all filling ingredients
- Spread half the cake batter into the bottom of the pan
- Sprinkle on half the filling carefully to avoid touching the edges of the pan (this will help prevent sticking)
- Gently spread the remaining batter on top of the filling
- Sprinkle the remaining filling on the top of the coffee cake.
- Bake at 325 degrees F until golden brown and a toothpick comes out clean.
